  • 1 cup quinoa
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare Your Ingredients: Dice the chicken into bite-sized pieces and chop the carrots, celery, and onion.
  2. Sauté Aromatics: In a large pot over medium heat, add olive oil. Sauté the onion until translucent, then add garlic and cook until fragrant.
