- 3–4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 cup quinoa
- 2 medium carrots, diced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 2 cups fresh spinach or kale
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare Your Ingredients: Dice the chicken into bite-sized pieces and chop the carrots, celery, and onion.
- Sauté Aromatics: In a large pot over medium heat, add olive oil. Sauté the onion until translucent, then add garlic and cook until fragrant.
- Cook Chicken: Add the diced chicken to the pot. Season with salt and pepper. Stir frequently until browned on all sides but not fully cooked through.
