Description

Indulge in the comforting warmth of this Slow Cooker Chicken and Dumplings—a delightful dish featuring tender chicken, fluffy dumplings, and a rich broth that feels like a hug on a plate.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 2 cups low-sodium chicken broth
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, finely diced
  • Salt and pepper to taste
  • Garlic powder to taste
  • Dried thyme to taste
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 4 tbsp melted butter

Instructions

  1. Prepare your ingredients by dicing carrots, celery, and onion into bite-sized pieces.
  2. Layer the chicken thighs at the bottom of the slow cooker. Add the diced vegetables on top.
  3. Pour in the chicken broth until everything is just covered.
  4. Season with salt, pepper, garlic powder, and dried thyme; gently stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 4 hours.
  6. In a bowl, mix together flour, baking powder, and salt.
  7. Stir in milk and melted butter until a thick batter forms.
  8. Once chicken is cooked through and easily shreds, drop spoonfuls of dumpling batter on top of the mixture in the slow cooker.
  9. Cover again and cook on high for an additional 30 minutes until dumplings are fluffy.
  10. Serve hot with extra broth drizzled over for added flavor.
