  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Gather and chop all ingredients: onions, garlic, and carrots. Set aside.
  2. In a large skillet over medium-high heat, add olive oil. Season lamb shanks with salt and pepper, then sear each side until golden brown (about 4 minutes per side). Remove from skillet and set aside.
  3. In the same skillet, add chopped onions and minced garlic. Sauté for about 3 minutes until soft and fragrant.
  4. Transfer sautéed vegetables to a slow cooker. Place seared lamb shanks on top, then pour in beef broth. Add fresh rosemary and thyme.
