  • 1.5 lbs pork tenderloin
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 cup chicken broth
  • Salt to taste
  • Pepper to taste
  • 1 tsp paprika
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey

Instructions

  1. Prepare your ingredients by rinsing the pork tenderloin and patting it dry.
  2. In a pan over medium-high heat, add olive oil. Sear the pork tenderloin on all sides until golden brown (about three minutes per side).
  3. In the same pan, add chopped onions and minced garlic; sauté until fragrant (about two minutes). Add chicken broth, salt, pepper, and paprika.
  4. Transfer everything into your Crock Pot and place the seared pork on top. Cover and cook on low for six hours or high for three hours.
  5. In a small bowl, mix balsamic vinegar and honey. When there’s about half an hour left in cooking time, pour this mixture over the tenderloin.
  6. Once cooked, remove the tenderloin from the Crock Pot and let it rest for five minutes before slicing. Drizzle with sauce before serving.
