  • 2 medium Fuji or Honeycrisp apples, thinly sliced
  • 3/4 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/2 cup toasted walnuts (or pecans)
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Wash the fresh spinach thoroughly under cold water and pat dry.
  2. Core the apples and slice them thinly. Toss with lemon juice to prevent browning.
  3. Thinly slice the red onion. For less bite, soak in cold water for five minutes.
  4. In a large bowl, combine the spinach, sliced apples, red onion, crumbled feta cheese, and toasted walnuts. Gently toss to mix.
