- 2 medium Fuji or Honeycrisp apples, thinly sliced
- 3/4 cup crumbled feta cheese
- 1/4 cup thinly sliced red onion
- 1/2 cup toasted walnuts (or pecans)
- 1/4 cup balsamic vinaigrette
Instructions
- Wash the fresh spinach thoroughly under cold water and pat dry.
- Core the apples and slice them thinly. Toss with lemon juice to prevent browning.
- Thinly slice the red onion. For less bite, soak in cold water for five minutes.
- In a large bowl, combine the spinach, sliced apples, red onion, crumbled feta cheese, and toasted walnuts. Gently toss to mix.
- Drizzle balsamic vinaigrette over the salad just before serving and toss lightly to coat.
- Serve immediately on plates or from the bowl at gatherings.
