- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained
- 2 cups shredded cheddar cheese
- 1 cup sour cream (or Greek yogurt)
- 1/4 cup chopped green onions
Instructions
- Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
- In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat if necessary, then stir in taco seasoning according to package instructions.
- While the beef is cooking, prepare the white rice according to package directions until tender.
- In a large bowl, combine cooked rice, seasoned beef, black beans, and half of the cheddar cheese. Stir until well mixed.
- Transfer the mixture into your prepared baking dish, spreading it evenly. Top with remaining cheddar cheese.
- Place your casserole in the preheated oven for about 25-30 minutes or until bubbly and golden brown on top.
