Instructions
- Preheat your oven to 350°F (175°C). Grease two round cake pans with butter or cooking spray.
- In a bowl, whisk together flour and baking powder until well combined.
- In another bowl, beat unsalted butter and granulated sugar until light and fluffy, about five minutes.
- Add eggs one at a time to the butter-sugar mixture, beating well after each addition. Stir in melted white chocolate chips.
- Gradually add the flour mixture into the wet ingredients, alternating with heavy cream until just combined.
- Gently fold in fresh raspberries. Divide batter evenly between prepared pans and bake for 25-30 minutes or until golden brown on top.
- Allow cakes to cool completely before frosting.
- In a mixing bowl, whip heavy cream until soft peaks form.
- Gradually add powdered sugar while continuing to whip until stiff peaks form.
