  • 1 cup fresh raspberries
  • 2 cups powdered sugar
  • 1 cup heavy cream (for whipping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans with butter or cooking spray.
  2. In a bowl, whisk together flour and baking powder until well combined.
  3. In another bowl, beat unsalted butter and granulated sugar until light and fluffy, about five minutes.
  4. Add eggs one at a time to the butter-sugar mixture, beating well after each addition. Stir in melted white chocolate chips.
  5. Gradually add the flour mixture into the wet ingredients, alternating with heavy cream until just combined.
  6. Gently fold in fresh raspberries. Divide batter evenly between prepared pans and bake for 25-30 minutes or until golden brown on top.
  7. Allow cakes to cool completely before frosting.
  8. In a mixing bowl, whip heavy cream until soft peaks form.
