  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 tablespoon olive oil
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons butter
  • Salt to taste

Instructions

  1. 1. Heat olive oil in a skillet over medium heat. Add diced onion and chopped carrots; sauté for about 5 minutes until softened.
  2. 2. Add minced garlic; cook until fragrant.
