- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth

- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons butter
- Salt to taste
Instructions
- 1. Heat olive oil in a skillet over medium heat. Add diced onion and chopped carrots; sauté for about 5 minutes until softened.
- 2. Add minced garlic; cook until fragrant.
- 3. Add ground beef to the skillet, cooking until browned (approximately 8 minutes), breaking it apart as it cooks.
- 4. Pour in beef broth and add frozen peas; stir well. Let simmer for about 10 minutes until slightly thickened.
- 1. Boil sweet potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and salt until creamy.
- 1. Preheat oven to 375°F (190°C). Grease a muffin tin lightly.
- 2. Spoon generous amounts of meat mixture into each muffin cup. Top each with a dollop of sweet potato mash.
- 3. Bake for about 20 minutes until heated through and slightly golden on top.
