Description

  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup brown sugar
  • 3 large eggs
  • 1/2 cup melted butter
  • 1/2 cup milk
  • 1 cup mixed dried fruits (raisins, dates, cranberries)
  • 1 cup chopped nuts (walnuts or pecans)
  • 1 cup powdered sugar
  • 2 tbsp whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or preferred baking dish.
  2. In a large bowl, whisk together all-purpose flour, baking powder, ground cinnamon, and salt until combined.
  3. In another bowl, beat brown sugar and eggs until creamy. Gradually add melted butter and milk, mixing until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined; some lumps are okay.
  5. Stir in the dried fruits and chopped nuts.
  6. Pour the batter into the prepared pan and bake for about 60-70 minutes or until a toothpick inserted into the center comes out clean.
  7. While the cake is cooling, mix powdered sugar with milk until smooth. Drizzle over the cooled cake before serving.
