Description

Indulge in tender, fall-off-the-bone lamb shanks slow-cooked in a rich, aromatic sauce, perfect for cozy family dinners or elegant gatherings.

Ingredients

Scale
  • 4 lamb shanks (about 2.5 lbs)
  • 2 sweet onions, chopped
  • 4 garlic cloves, minced
  • 4 carrots, chopped
  • 2 cups beef broth (low-sodium)
  • 2 tbsp fresh rosemary
  • 3 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients. Chop onions and carrots into bite-sized pieces and mince garlic.
  2. In a large skillet over medium-high heat, add olive oil. Sear each lamb shank on all sides until golden brown (about 3 minutes per side). Remove from skillet and set aside.
  3. In the same skillet, add onions and carrots; sauté until soft (about 5 minutes). Add minced garlic and cook until fragrant (about 1 minute).
  4. Return lamb shanks to the skillet. Add beef broth, tomato paste, rosemary, salt, and pepper. Bring to a gentle boil.
  5. Transfer everything into a slow cooker or Dutch oven. If using an oven, cover tightly and cook at low heat (around 325°F) for about 3 hours until fork-tender.
  6. Serve your Slow-Cooked Lamb Shanks on a bed of creamy mashed potatoes or with fresh crusty bread to soak up the flavorful sauce.
