Description

This savoury bread pudding transforms stale bread into a creamy, cheesy dish that’s perfect for brunch or dinner gatherings.

Ingredients

Scale
  • 46 large eggs
  • 2 cups whole milk
  • 1 cup Gruyère cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 4 cups stale bread, cubed (baguette, ciabatta, or sourdough)
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 2 cups spinach, chopped
  • 2 tsp fresh thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
  2. Prepare Your Bread: Cut the stale bread into one-inch cubes and place them in a large mixing bowl. Optionally, toast them lightly in the oven for extra crunch.
  3. Whisk Together Wet Ingredients: In another bowl, whisk together the eggs and milk until smooth. Add salt, pepper, and herbs; mix well.
  4. Combine Ingredients: Pour the egg mixture over the bread cubes in the mixing bowl. Add the shredded cheeses and diced vegetables. Gently fold everything together until each bread piece is coated.
  5. Bake It Up: Transfer the mixture to the prepared baking dish evenly. Bake for approximately 45-50 minutes until puffed and golden brown on top.
  6. Serve Warm: Allow to cool slightly before slicing into squares. Serve warm as a side dish or main course.
