Description

Indulge in these rich chocolate coconut bites, perfect for gatherings or a sweet afternoon snack. Easy to make and irresistibly delicious!

Ingredients

Scale
  • 1 cup crushed vanilla wafer cookies
  • 1/2 cup unsweetened cocoa powder
  • 1 cup powdered sugar (sifted)
  • 1/2 cup dark rum
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup shredded coconut (optional)

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, mix together the crushed vanilla wafer cookies, cocoa powder, and sifted powdered sugar until well blended.
  2. Add Nuts: Fold in the chopped walnuts or pecans. Toast them in a dry skillet over medium heat for about five minutes until fragrant for added flavor.
  3. Incorporate Liquid Ingredients: Pour in the dark rum and mix until a sticky dough forms. If the mixture is too crumbly, add more rum gradually.
  4. Shape the Mixture: With clean hands, scoop out small amounts of the mixture and roll them into balls about one inch in diameter.
  5. Roll and Chill: Roll each ball in powdered sugar or shredded coconut (or both) and place them on a parchment-lined baking sheet. Refrigerate for at least two hours to firm up.
  6. Serve: Once chilled, transfer the chocolate bites to a serving platter. Enjoy immediately or store in an airtight container in the fridge for up to two weeks.
