  • 2 tsp olive oil
  • 1 cup fresh blackberries
  • 2 tbsp balsamic vinegar
  • 2 tbsp raw honey
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels and season generously with salt and pepper.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the tenderloin on all sides until golden brown, about 3-4 minutes per side.
  4. Transfer the skillet to the oven and roast for 20-25 minutes or until the internal temperature reaches at least 145°F (63°C). Let it rest for five minutes before slicing.
  5. In a saucepan over medium heat, combine blackberries, balsamic vinegar, honey, minced garlic, and thyme.
  6. Cook for about 8-10 minutes until blackberries break down into a sauce.
