Instructions
- Preheat your oven to 400°F (200°C).
- Pat the pork tenderloin dry with paper towels and season generously with salt and pepper.
- In an oven-safe skillet, heat olive oil over medium-high heat. Sear the tenderloin on all sides until golden brown, about 3-4 minutes per side.
- Transfer the skillet to the oven and roast for 20-25 minutes or until the internal temperature reaches at least 145°F (63°C). Let it rest for five minutes before slicing.
- In a saucepan over medium heat, combine blackberries, balsamic vinegar, honey, minced garlic, and thyme.
- Cook for about 8-10 minutes until blackberries break down into a sauce.
