Description

Reindeer Cupcakes are a delightful holiday treat that combines moist chocolate cupcakes with creamy frosting and playful decorations, perfect for any festive gathering.

  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 8 oz full-fat cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • Small pretzel twists (for antlers)
  • Maraschino cherries (for noses)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, mix the eggs, milk, vegetable oil, and vanilla extract until smooth. Gradually add this mixture to the dry ingredients while stirring gently.
  4. Pour the batter into cupcake liners about two-thirds full. Bake in the preheated oven for about 18-20 minutes or until a toothpick comes out clean.
  5. While cupcakes cool, beat the softened cream cheese and butter in a bowl until smooth. Gradually add powdered sugar until you reach desired sweetness and consistency.
  6. Once cooled, generously frost each cupcake with the cream cheese frosting. Insert two pretzels into each cupcake for antlers and place a maraschino cherry on top as Rudolph's nose.
