  • 1 sheet puff pastry (thawed according to package instructions)
  • 500g mixed game meats (venison, rabbit, pheasant, or chicken)
  • 1 large onion (finely chopped)
  • 200g mixed mushrooms (fresh, chopped)
  • 2 tbsp fresh thyme (chopped)
  • 2 tbsp fresh parsley (chopped)
  • Salt and pepper to taste
  • 1 egg (beaten with a splash of water for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dice the mixed game meats into bite-sized pieces.
  3. In a large skillet over medium heat, add oil and sauté the chopped onion until soft and translucent, about 5 minutes.
  4. Add the mushrooms and cook until tender and their moisture has evaporated.
  5. Stir in the diced game meats along with fresh herbs. Season generously with salt and pepper. Cook until browned all over, approximately 8 minutes.
  6. Remove from heat and let cool slightly before transferring the mixture into a pie dish lined with puff pastry.
  7. Roll out another sheet of puff pastry on a floured surface for the top crust.
  8. Carefully place it over the filled pie dish and seal edges by pinching or using a fork.
  9. Brush the top with egg wash and make small slits in the crust for steam to escape.
  10. Bake in the preheated oven for about 45-50 minutes until golden brown.
