Instructions
- Preheat Your Oven: Preheat your oven to 400°F (200°C).
- Prepare the Chicken: Pat chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
- Mix the Glaze: In a bowl, whisk together pomegranate juice, honey, minced garlic, and soy sauce until well combined.
- Sear the Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Add chicken thighs skin-side down and sear until golden brown (about 5 minutes). Flip to sear the other side.
- Add the Glaze: Pour half of the glaze over the seared chicken thighs, spreading it evenly.
- Bake: Transfer the skillet to your preheated oven and bake for about 30 minutes or until internal temperature reaches at least 165°F (74°C). Baste with remaining glaze halfway through cooking.
- Serve: Once cooked, transfer chicken to plates and drizzle with any remaining glaze. Garnish with pomegranate seeds before serving.
