  • 1 cup all-purpose flour
  • 6 tbsp unsalted butter, cold and cubed
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 34 tbsp ice-cold water
  • 1 cup high-quality mascarpone cheese
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 2 ripe Fuyu persimmons, thinly sliced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix flour, sugar, and salt.
  3. Add cold butter cubes and mix until crumbly.
  4. Gradually add ice-cold water until dough holds together.
  5. Form into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  6. Roll out dough on a floured surface to about 1/8-inch thick.
  7. Transfer to a tart pan and trim excess dough; prick holes in the bottom.
  8. Bake for 15 minutes or until lightly golden. Allow to cool completely.
  9. In another bowl, blend mascarpone cheese with vanilla extract and lemon juice until smooth.
  10. Spread mixture evenly over the cooled crust.
  11. Arrange thinly sliced persimmons artfully over the mascarpone layer.
  12. Serve immediately or chill before serving for enhanced flavor.
