- 2 tbsp sugar
- 1/4 tsp salt
- 3–4 tbsp ice-cold water
- 1 cup high-quality mascarpone cheese
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 2 ripe Fuyu persimmons, thinly sliced
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix flour, sugar, and salt.
- Add cold butter cubes and mix until crumbly.
- Gradually add ice-cold water until dough holds together.
- Form into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
- Roll out dough on a floured surface to about 1/8-inch thick.
- Transfer to a tart pan and trim excess dough; prick holes in the bottom.
- Bake for 15 minutes or until lightly golden. Allow to cool completely.
- In another bowl, blend mascarpone cheese with vanilla extract and lemon juice until smooth.
- Spread mixture evenly over the cooled crust.
- Arrange thinly sliced persimmons artfully over the mascarpone layer.
- Serve immediately or chill before serving for enhanced flavor.
