Instructions
- In a large mixing bowl, combine creamy peanut butter, softened unsalted butter, and powdered sugar. Mix until smooth and well blended.
- Roll the mixture into small balls, about one inch in diameter. Place on a parchment-lined baking sheet and freeze for about 30 minutes until firm.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in short bursts (about 30 seconds), stirring between each until melted and smooth.
- Remove the frozen peanut butter balls from the freezer. Using a toothpick or fork, dip each ball into the melted chocolate until fully coated. Allow excess chocolate to drip off before placing them back on the baking sheet.
- Chill in the refrigerator for about an hour until set completely.
