Instructions
- Preheat Your Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the Potatoes: Wash the mini potatoes thoroughly under cold water. Pat them dry with a towel and cut each potato in half lengthwise.
- Season: In a large bowl, toss the halved potatoes with olive oil and kosher salt until evenly coated.
