  • 2 lbs Yukon Gold or red potatoes, cut into chunks

  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare Your Ingredients: Gather chicken breasts, potatoes, broth, herbs, garlic powder, salt, and pepper.
  2. Season the Chicken: Rub olive oil over chicken breasts and season generously with salt, pepper, and garlic powder.
  3. Sauté Time: Set your Instant Pot to 'Sauté' mode. Heat a splash of olive oil (about 1 tbsp) and add seasoned chicken breasts. Sauté for about 3-4 minutes per side until slightly browned.
  4. Add the Potatoes: Remove the chicken from the pot. Add potato chunks along with rosemary and pour in the chicken broth.
