- 2 large ripe tomatoes, chopped

- 8 oz fresh mozzarella cheese, torn into pieces
- Fresh basil leaves (about 10 leaves)
- 1 tbsp extra virgin olive oil
- Pinch of salt for garnish
Instructions
- In a bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until bubbly.
- In a separate bowl, mix flour and salt. Add the yeast mixture and olive oil; stir until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour.
- In a bowl, mash the chopped tomatoes with salt until chunky.
- Preheat your oven to 475°F (245°C).
- Roll out the risen dough on a floured surface to your desired shape (about 12 inches in diameter).
- Spread the tomato sauce evenly over the dough.
- Scatter pieces of mozzarella over the sauce.
- Bake in the preheated oven for 10–12 minutes or until cheese is bubbly and crust is golden.
- Once baked, add fresh basil leaves and drizzle with olive oil before slicing.
