Description

Crispy goat cheese croquettes filled with creamy cheese and fresh herbs, perfect for appetizers or a cozy snack.

Ingredients

Scale
  • 8 oz goat cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 2 tbsp fresh chives (or parsley)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Olive oil (for frying)

Instructions

  1. Prepare the Mixture: In a mixing bowl, combine goat cheese, chopped herbs, salt, and pepper. Mash until smooth.
  2. Forming the Croquettes: Take tablespoon-sized portions of the mixture and roll them into balls. Set aside on a plate.
  3. Breading Station Setup: Place beaten eggs in one shallow bowl and panko breadcrumbs in another. Dip each ball into the egg, then roll in breadcrumbs until fully coated.
  4. Frying Time: Heat olive oil in a skillet over medium heat. Once hot, gently place croquettes in batches into the skillet.
  5. Golden Perfection: Fry until golden brown on each side, about 3-4 minutes per side. Remove and place on paper towels to absorb excess oil.
  6. Serve and Enjoy: Transfer croquettes to a platter and serve with your favorite dipping sauce or enjoy plain.
