- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp freshly squeezed lemon juice
- 1 cup long-grain white rice or jasmine rice
- 2 cups low-sodium chicken broth
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
Instructions
- In a large skillet, melt the butter over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add shrimp and cook until pink and opaque, around 3 minutes per side.
- Squeeze lemon juice over cooked shrimp and stir to coat.
- In a medium saucepan, combine rice and chicken broth. Bring to a boil over medium heat.
- Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed.
- Fluff rice with a fork and stir in chopped parsley and basil.
