  • 1 lb fresh or frozen shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 1 cup long-grain white rice or jasmine rice
  • 2 cups low-sodium chicken broth
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp and cook until pink and opaque, around 3 minutes per side.
  4. Squeeze lemon juice over cooked shrimp and stir to coat.
  5. In a medium saucepan, combine rice and chicken broth. Bring to a boil over medium heat.
  6. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed.
  7. Fluff rice with a fork and stir in chopped parsley and basil.
  8. Spoon creamy herb rice into bowls and top with garlic butter shrimp.
  9. Add an extra squeeze of lemon for added brightness.
