  • 23 bay leaves
  • Salt and pepper to taste

Instructions

  1. Chop the beef chuck roast into bite-sized pieces. Slice the carrots and onions, and mince the garlic.
  2. In a large pot or Dutch oven over medium-high heat, add olive oil. Once hot, add the beef in batches to avoid overcrowding. Sear until golden brown on all sides.
  3. Remove the seared beef and set aside. In the same pot, add onions and carrots; sauté until softened. Stir in minced garlic for about 1 minute until fragrant.
  4. Return the beef to the pot. Add thyme, bay leaves, salt, and pepper. Stir well to combine.
  5. Cover and reduce heat to low. Let simmer for about 2 hours until the beef is fork-tender and flavors meld beautifully.
  6. Serve hot with crusty bread or mashed potatoes on the side; garnish with fresh parsley if desired.
