  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 46 tbsp ice water
  • 4 cups Granny Smith apples, peeled and thinly sliced
  • 4 cups Honeycrisp apples, peeled and thinly sliced
  • ¾ cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tsp cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Gradually add ice water until a moist dough forms. Shape into a disk, wrap in plastic wrap, and refrigerate for about an hour.
  5. While the dough chills, toss sliced apples with sugar, lemon juice, and cinnamon in a bowl until well coated.
  6. Roll out two-thirds of the chilled dough on a floured surface until it's large enough to fit your pie pan.
  7. Place the rolled dough gently into the pan without stretching it.
  8. Pour the apple filling into the crust.
  9. Roll out the remaining dough for the top crust; place it whole or cut slits for a lattice effect.
  10. Bake in preheated oven for about 45 minutes or until the crust is golden brown and apples are tender.
