- ½ cup unsalted butter, melted
- ¼ cup sugar
- 2 cups fresh cranberries
- 1 cup granulated sugar (adjust to taste)
- ½ cup water
- 2 tablespoons unflavored gelatin
- 1 cup heavy whipping cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed.
- Press the mixture firmly into the bottom of a pie dish.
- Bake for 8 minutes, then allow to cool completely.
- Rinse cranberries under cold water, discarding any blemished ones.
- In a saucepan over medium heat, combine cranberries, sugar, and water. Cook for about 10 minutes until cranberries burst and form a sauce.
- Remove from heat and sprinkle gelatin over the warm cranberry sauce; stir until fully dissolved.
- In a separate bowl, whip heavy cream to soft peaks.
- Gently fold the cooled cranberry mixture into the whipped cream until combined.
- Pour the mousse filling into the cooled crust and smooth out the top.
- Refrigerate for at least 4 hours or until set.
