Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar
  • 2 cups fresh cranberries
  • 1 cup granulated sugar (adjust to taste)
  • ½ cup water
  • 2 tablespoons unflavored gelatin
  • 1 cup heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed.
  3. Press the mixture firmly into the bottom of a pie dish.
  4. Bake for 8 minutes, then allow to cool completely.
  5. Rinse cranberries under cold water, discarding any blemished ones.
  6. In a saucepan over medium heat, combine cranberries, sugar, and water. Cook for about 10 minutes until cranberries burst and form a sauce.
  7. Remove from heat and sprinkle gelatin over the warm cranberry sauce; stir until fully dissolved.
  8. In a separate bowl, whip heavy cream to soft peaks.
  9. Gently fold the cooled cranberry mixture into the whipped cream until combined.
  10. Pour the mousse filling into the cooled crust and smooth out the top.
  11. Refrigerate for at least 4 hours or until set.
