Description

Experience the warmth of Coq au Vin, a delightful French chicken dish bursting with savory flavors and perfect for cozy gatherings.

Ingredients

Scale
  • 46 bone-in chicken thighs
  • 2 cups low-sodium chicken broth
  • 4 medium carrots, sliced into rounds
  • 8 oz cremini or button mushrooms, quartered
  • 45 cloves garlic, minced
  • 1 cup pearl onions or chopped yellow onions
  • 1 tbsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Brown the Chicken: Heat a large Dutch oven over medium heat. Add olive oil and brown the chicken thighs skin-side down for about 5 minutes on each side. Remove chicken and set aside.
  2. Sauté the Vegetables: In the same pot, add minced garlic, pearl onions, carrots, and mushrooms. Sauté for about 3 minutes until fragrant.
  3. Add Broth and Seasoning: Return the chicken to the pot. Pour in low-sodium chicken broth and add thyme, salt, and pepper to taste.
  4. Simmer: Bring the mixture to a gentle simmer. Cover and cook on low heat for approximately 1 hour until the chicken is tender and flavors meld together.
  5. Serve: Serve Coq au Vin warm in deep bowls alongside crusty bread or creamy mashed potatoes.
