Ingredients

Scale
  • 34 boneless, skinless chicken breasts, diced
  • 2 cloves fresh garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 medium carrots, thinly sliced
  • 8 oz lo mein noodles
  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar

Instructions

  1. Prepare Your Ingredients; Gather all ingredients. Dice chicken and slice veggies so they’re ready to use.
  2. Cook the Chicken; In a large skillet or wok over medium-high heat, add oil and cook the chicken pieces until golden brown and cooked through (about 5 minutes). Remove from the skillet and set aside.
  3. Sauté the Vegetables; In the same skillet, add minced garlic, followed by bell peppers and carrots. Stir-fry for about 3 minutes until slightly softened but still crunchy.
  4. Combine Everything; Return the cooked chicken to the skillet with vegetables. Add cooked lo mein noodles and pour in soy sauce, sesame oil, and brown sugar. Toss everything together until well combined.
  5. Serve It Up; Transfer to plates or bowls. Optionally garnish with green onions or sesame seeds.
  6. Enjoy Every Bite; Dig in with chopsticks or a fork and relish your homemade Chicken Lo Mein!
