- 2 large eggs, room temperature
- 1 cup granulated sugar
- 1 tsp vanilla extract
- ½ cup semi-sweet chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line a standard muffin tin with cupcake liners.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until sandy.
- Press this mixture firmly into the bottom of each cupcake liner.
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a separate bowl, beat eggs and vanilla extract before gradually adding sugar until light and fluffy (about two minutes).
- Fold in dry ingredients into the egg mixture until just combined. Gently stir in chocolate chips.
- Pour batter over each graham cracker crust until three-quarters full. Top each with mini marshmallows.
- Bake for about 18-20 minutes or until a toothpick inserted comes out clean. Allow cooling before serving.
