  • 1 ½ cups graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 large eggs, room temperature
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard muffin tin with cupcake liners.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until sandy.
  3. Press this mixture firmly into the bottom of each cupcake liner.
  4. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. In a separate bowl, beat eggs and vanilla extract before gradually adding sugar until light and fluffy (about two minutes).
  6. Fold in dry ingredients into the egg mixture until just combined. Gently stir in chocolate chips.
  7. Pour batter over each graham cracker crust until three-quarters full. Top each with mini marshmallows.
  8. Bake for about 18-20 minutes or until a toothpick inserted comes out clean. Allow cooling before serving.
