- ¾ cup cocoa powder
- 2 cups granulated sugar
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 3 large eggs
- 1 cup whole milk (or almond/oat milk)
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 2 cups heavy cream
- ½ cup powdered sugar
- Mini marshmallows (as desired)
Instructions
- Preheat your oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
- In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix eggs, milk, oil, and vanilla extract until smooth. Gradually add this mixture to the dry ingredients and stir until just combined.
- Divide the batter evenly between prepared pans. Bake for 30–35 minutes or until a toothpick comes out clean. Let cool in pans for about ten minutes before transferring to wire racks.
- Whip heavy cream in a mixing bowl until soft peaks form. Gradually add powdered sugar and beat until stiff peaks form.
- Once cakes are completely cooled, place one layer on a serving plate and spread frosting on top. Add the second layer and frost the top and sides of the entire cake.
- Top with mini marshmallows as desired.
