Description

  • ¾ cup cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda

  • 3 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • Mini marshmallows (as desired)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
  2. In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix eggs, milk, oil, and vanilla extract until smooth. Gradually add this mixture to the dry ingredients and stir until just combined.
  4. Divide the batter evenly between prepared pans. Bake for 30–35 minutes or until a toothpick comes out clean. Let cool in pans for about ten minutes before transferring to wire racks.
  5. Whip heavy cream in a mixing bowl until soft peaks form. Gradually add powdered sugar and beat until stiff peaks form.
  6. Once cakes are completely cooled, place one layer on a serving plate and spread frosting on top. Add the second layer and frost the top and sides of the entire cake.
  7. Top with mini marshmallows as desired.
