Indulge in creamy, cheesy potatoes layered with sweet caramelized onions, baked until golden and bubbling—a perfect comfort food for any occasion.

Ingredients

Scale
  • 4 large russet potatoes
  • 2 large sweet onions
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 4 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. Preheat Your Oven: Preheat your oven to 375°F (190°C). Grease a large baking dish with butter.
  2. Slice the Potatoes: Wash and peel the russet potatoes. Slice them into thin rounds, about an eighth-inch thick.
  3. Caramelize the Onions: In a skillet over medium heat, melt two tablespoons of butter. Add sliced sweet onions and sprinkle with salt. Cook slowly until golden brown, about 20 minutes.
  4. Layer the Ingredients: In the greased baking dish, layer half of the potato slices at the bottom. Sprinkle with salt, pepper, half of the cheddar cheese, and half of the caramelized onions.
  5. Repeat Layering: Repeat the layering process with remaining potatoes, cheese, and onions until all ingredients are used. Pour heavy cream evenly over everything.
  6. Bake: Cover with aluminum foil and bake for about 45 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown on top.
  7. Serve: Let cool slightly before serving. Enjoy this deliciously rich side dish!
