  • 1 medium onion, finely chopped
  • 1 cup bell peppers, diced (any color)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup corn (canned or frozen)
  • Salt and pepper to taste
  • Optional spices: chili powder or cumin
  • 1 cup stone-ground cornmeal
  • 1 cup whole milk (or plant-based milk)
  • 2 large eggs
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat as needed.
  3. Add chopped onion and bell peppers; sauté for about five minutes until soft.
  4. Stir in canned tomatoes (with juices), corn, salt, pepper, and optional spices. Simmer for about ten minutes.
  5. In a separate bowl, mix cornmeal, milk, eggs, baking powder, and sugar until just combined; do not overmix.
  6. Pour half of the cornbread batter into the prepared dish as a base.
  7. Spread the meat mixture evenly over the batter.
  8. Pour the remaining cornbread batter on top and sprinkle with shredded cheddar cheese.
  9. Bake for 25-30 minutes or until golden brown.
