- 1 cup corn (canned or frozen)

- 1 cup stone-ground cornmeal
- 1 cup whole milk (or plant-based milk)
- 2 large eggs
- 2 tsp baking powder
- 2 tbsp sugar
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with nonstick spray.
- In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat as needed.
- Add chopped onion and bell peppers; sauté for about five minutes until soft.
- Stir in canned tomatoes (with juices), corn, salt, pepper, and optional spices. Simmer for about ten minutes.
- In a separate bowl, mix cornmeal, milk, eggs, baking powder, and sugar until just combined; do not overmix.
- Pour half of the cornbread batter into the prepared dish as a base.
- Spread the meat mixture evenly over the batter.
- Pour the remaining cornbread batter on top and sprinkle with shredded cheddar cheese.
- Bake for 25-30 minutes or until golden brown.
