Description

Warm and comforting, this Chipotle Sweet Potato Black Bean Chili combines smoky chipotle flavors with sweet potatoes and hearty black beans for a satisfying meal that’s simple to prepare.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and diced
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 3 chipotle peppers in adobo sauce, minced
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 4 cups low-sodium vegetable broth
  • 1 bell pepper (any color), chopped

Instructions

  1. Prepare Your Ingredients: Peel and chop the sweet potatoes into bite-sized cubes. Dice the onion and bell pepper.
  2. Sauté Your Vegetables: In a large pot over medium heat, add a splash of olive oil. Sauté the onions until translucent (about 5 minutes). Add the bell peppers and cook for another 3 minutes.
  3. Add Garlic and Spices: Stir in the minced garlic and cumin; allow to cook for about 1 minute until fragrant.
  4. Combine Everything: Add the diced sweet potatoes, drained black beans, minced chipotle peppers with some adobo sauce, and pour in enough vegetable broth to cover all ingredients. Stir well.
  5. Simmer Away: Bring to a gentle boil, then reduce heat to low. Cover the pot and simmer for about 25 minutes or until sweet potatoes are tender.
  6. Serve Up!: Ladle generous portions into bowls. Top with fresh cilantro or avocado if desired.
