- 2 fresh lemons (juiced)

- 8 oz twisty pasta (e.g., fusilli or rotini)
- 1 cup heavy cream
- 1 cup roasted red peppers (jarred or homemade)
- 1/2 cup grated Parmesan cheese
- 2 cloves fresh garlic (minced)
- 2 tsp Cajun seasoning
- Olive oil for sautéing
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper, then place them in the prepared baking dish. Squeeze fresh lemon juice over the chicken.
- Bake in the preheated oven for 20-25 minutes until cooked through. Let rest before cutting into bite-sized pieces.
- While the chicken is baking, bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
