  • 2 fresh lemons (juiced)
  • Salt and pepper to taste
  • 8 oz twisty pasta (e.g., fusilli or rotini)
  • 1 cup heavy cream
  • 1 cup roasted red peppers (jarred or homemade)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves fresh garlic (minced)
  • 2 tsp Cajun seasoning
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper, then place them in the prepared baking dish. Squeeze fresh lemon juice over the chicken.
