- 2 fresh lemons (juice)
- 2–3 cloves garlic (minced)
- 1/4 cup extra virgin olive oil
- 1 tbsp fresh thyme (chopped)
- 1 tbsp fresh rosemary (chopped)
- 1 tbsp fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- Preheat Your Oven: Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Prepare Your Chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.
- Make Your Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, chopped thyme, rosemary, parsley, salt, and pepper. Mix well.
- Marinate the Chicken: Place the seasoned chicken in a resealable bag or shallow dish. Pour the marinade over it, seal tightly or cover, and refrigerate for at least 30 minutes.
- Roast It Up: Lay the marinated chicken in the prepared baking dish. Pour any remaining marinade on top and roast for about 25-30 minutes or until the internal temperature reaches 165°F (75°C).
- Serve With Style: Remove from the oven and let rest briefly before slicing. Drizzle with pan juices before serving.
