Description

Lemon and herb roasted chicken breast is a bright, flavorful dish that transforms any meal into a delightful experience. Simple to prepare, it’s perfect for both weeknight dinners and special occasions.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 2 fresh lemons (juice)
  • 23 cloves garlic (minced)
  • 1/4 cup extra virgin olive oil
  • 1 tbsp fresh thyme (chopped)
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat Your Oven: Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Prepare Your Chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  3. Make Your Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, chopped thyme, rosemary, parsley, salt, and pepper. Mix well.
  4. Marinate the Chicken: Place the seasoned chicken in a resealable bag or shallow dish. Pour the marinade over it, seal tightly or cover, and refrigerate for at least 30 minutes.
  5. Roast It Up: Lay the marinated chicken in the prepared baking dish. Pour any remaining marinade on top and roast for about 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  6. Serve With Style: Remove from the oven and let rest briefly before slicing. Drizzle with pan juices before serving.
