Ingredients
Scale
- 4 slices thick-cut turkey bacon
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 cups ripe cherry or grape tomatoes, halved
- 3 cups low-sodium vegetable broth
- 1 cup heavy cream
- 2 cups fresh romaine lettuce, chopped
- Salt and pepper to taste
- Optional: Fresh herbs (basil or parsley) for garnish
Instructions
- Fry the turkey bacon in a large pot over medium heat until crispy and golden brown, about 5 minutes. Remove the bacon and set it aside, leaving the fat in the pot.
- In the same pot, add diced onions and sauté until translucent, about 3 minutes. Add minced garlic and sauté for an additional minute until fragrant.
- Incorporate halved tomatoes into the pot along with salt and pepper. Cook them down for about 5 minutes until soft.
- Add vegetable broth to the pot and bring everything to a gentle simmer for about 10 minutes to allow flavors to meld.
- Using an immersion blender (or transferring to a regular blender), blend the soup until smooth. For added texture, leave some chunks if desired.
- Lower the heat and stir in heavy cream until fully combined. Let it simmer gently for another few minutes before serving.
- Ladle the soup into bowls, topping each with crispy bacon bits and chopped fresh lettuce for crunch. Serve immediately with your favorite crunchy bread on the side.
