Instructions

  1. Fry the turkey bacon in a large pot over medium heat until crispy and golden brown, about 5 minutes. Remove the bacon and set it aside, leaving the fat in the pot.
  2. In the same pot, add diced onions and sauté until translucent, about 3 minutes. Add minced garlic and sauté for an additional minute until fragrant.
  3. Incorporate halved tomatoes into the pot along with salt and pepper. Cook them down for about 5 minutes until soft.
  4. Add vegetable broth to the pot and bring everything to a gentle simmer for about 10 minutes to allow flavors to meld.
  5. Using an immersion blender (or transferring to a regular blender), blend the soup until smooth. For added texture, leave some chunks if desired.
