  • 4 ripe Bosc or Anjou pears
  • 2 cups dry red wine
  • 1/2 cup granulated sugar
  • 2 cinnamon sticks
  • 1 star anise pod
  • 4 whole cloves

Instructions

  1. In a medium saucepan over medium heat, combine red wine, sugar, cinnamon sticks, star anise, and whole cloves. Stir until sugar dissolves completely.
  2. Allow the mixture to come to a gentle simmer.
  3. Peel the pears while keeping their stems intact. Slice a small amount from the bottom of each pear so they can stand upright.
  4. Carefully place your prepared pears into the simmering wine mixture. Cover and poach for about 20-25 minutes until tender but not mushy, turning occasionally for even flavor absorption.
  5. Once finished cooking, remove from heat and let cool slightly before transferring pears to a serving dish. Strain out the spices if desired.
  6. Drizzle some of the luscious poaching liquid over each pear before serving.
