  • 1/2 cup plain or Italian breadcrumbs
  • 1 large egg
  • 1 medium yellow onion, diced
  • 1 cup cranberry sauce (whole berry)
  • 1 pound fresh green beans
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil (for green beans)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, diced onion, salt, and pepper. Mix gently until just combined.
  3. Transfer the meat mixture to a parchment-lined baking sheet and shape it into a loaf about an inch thick.
  4. Spread half of the cranberry sauce evenly over the top of the meatloaf.
  5. In a separate bowl, toss fresh green beans with olive oil, salt, and pepper.
  6. Arrange the seasoned green beans around the meatloaf on the baking sheet.
  7. Bake in the preheated oven for approximately 45 minutes or until the meatloaf reaches an internal temperature of at least 160°F (70°C).
