  • 1 cup pure apple cider
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 2 tbsp extra virgin olive oil

Instructions

  1. Trim excess fat from the pork tenderloin and slice it into 1-inch thick medallions.
  2. Heat olive oil in a large skillet over medium-high heat. Sear each side of the medallions until golden brown, about 3 minutes per side. Remove and set aside.
  3. In the same skillet, add chopped onion and minced garlic; sauté for about 2 minutes until fragrant and translucent.
  4. Pour in apple cider and Dijon mustard, stirring to combine. Allow to simmer for about 5 minutes until slightly reduced.
  5. Add the seared pork medallions back into the skillet, coating them with the sauce. Cook for an additional 5 minutes.
