- 1 cup all-purpose flour
- 1/2 cup unsalted butter (cold)
- 2–4 tbsp ice-cold water
- 2 cups mixed fresh mushrooms (cremini and shiitake)
- 3 large eggs
- 1 cup heavy cream
- 2 tbsp truffle oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix all-purpose flour and cold unsalted butter until it resembles coarse crumbs.
- Gradually add ice-cold water until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- While the dough chills, heat olive oil in a skillet over medium-high heat.
- Sauté chopped mushrooms until golden brown, about 5-7 minutes. Season with salt and pepper.
- In a bowl, whisk together eggs and heavy cream. Stir in sautéed mushrooms and truffle oil.
- Roll out chilled dough on a floured surface to about 1/8 inch thick.
- Transfer to a tart pan and trim excess dough.
- Pour mushroom mixture into the crust, filling generously.
- Bake for 30-35 minutes or until golden brown and set in the center.
