Description

Experience the bliss of rich chocolate and refreshing peppermint in this moist Chocolate Peppermint Cake, perfect for celebrations or a delightful everyday treat.

Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 1 tsp peppermint extract
  • ½ cup softened butter
  • 2 cups powdered sugar
  • 2 tbsp whole milk (optional for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and line with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, mix the eggs, milk, oil, and peppermint extract until smooth. Gradually add this to the dry ingredients while stirring gently until just combined.
  4. Divide the batter evenly between the prepared pans. Bake for about 30-35 minutes or until a toothpick comes out clean.
  5. Let cakes cool completely on wire racks.
  6. In a bowl, beat together softened butter and powdered sugar until creamy. Add milk if needed to reach desired consistency.
  7. Once cooled, place one layer on a serving plate, spread frosting on top, then add the second layer and frost the entire cake. Decorate with crushed peppermint candies if desired.
