Description

Indulge in a warm, creamy potato soup enriched with fresh spinach for a comforting meal that warms both body and soul.

Ingredients

Scale
  • 1 lb Italian sausage
  • 4 medium Yukon Gold or Russet potatoes, peeled and diced
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach

Instructions

  1. Brown the Sausage: In a large pot over medium heat, add the Italian sausage. Cook until browned and no longer pink, breaking it apart as it cooks.
  2. Sauté Onions and Garlic: Add the diced onions and minced garlic to the pot. Sauté until translucent and fragrant, about 5 minutes.
  3. Add Potatoes and Broth: Stir in the diced potatoes and pour in the chicken broth. Bring to a gentle boil, then reduce heat and let it simmer for 15-20 minutes until potatoes are tender.
  4. Stir in Cream: Once the potatoes are soft, lower the heat further and slowly stir in the heavy cream until well combined.
  5. Add Spinach: Fold in fresh spinach until just wilted, about 2 minutes.
  6. Serve Up!: Ladle soup into bowls, adding extra black pepper or grated cheese on top if desired. Enjoy immediately!
