Description

Warm up with this comforting Italian Sausage & Tortellini Soup, a quick and delicious meal that’s perfect for chilly days.

Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 8 oz cheese tortellini (fresh or frozen)
  • 4 cups chicken broth (low-sodium recommended)
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 medium onion, chopped

Instructions

  1. Sauté the Sausage: In a large pot over medium heat, add the Italian sausage. Break it apart with a wooden spoon while cooking until browned and no longer pink, about 5-7 minutes.
  2. Add Aromatics: Incorporate the chopped onions and minced garlic into the pot. Sauté for another 3-4 minutes until the onions are translucent and fragrant.
  3. Mix in Veggies: Add the diced carrots and bell peppers to the pot. Stir to combine and cook for about 5 minutes until slightly softened.
  4. Pour in the Broth: Carefully add the chicken broth, scraping any bits stuck at the bottom of the pot. Increase heat to bring it to a gentle simmer.
  5. Add Tortellini: Toss in the tortellini and cook according to package instructions (usually about 4-5 minutes) until they are tender.
  6. Finish with Spinach: Stir in fresh spinach just before serving until wilted, approximately one minute.
