Instructions

  1. Preheat your oven to 425°F (220°C). Toss the cubed sweet potatoes in olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until golden brown and tender.

  3. In a large bowl, layer the mixed greens as the base. Once the sweet potatoes have cooled slightly, add them along with sliced apples, dried cranberries, and toasted walnuts.
