  • 1 cup all-purpose flour
  • 3 fresh lemons (for juice and zest)
  • 3 tbsp capers
  • 4 tbsp butter
  • 1 cup low-sodium chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken breasts between plastic wrap or parchment paper. Gently pound to about half an inch thick. Season both sides with salt and pepper.
  2. On a plate, pour flour and coat each chicken breast evenly on both sides. Shake off excess flour.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Remove and keep warm.
  4. In the same skillet, melt butter until foamy. Add minced garlic and sauté for about one minute. Stir in lemon juice, zest, capers, and chicken broth to deglaze the pan.
  5. Let the sauce simmer for about five minutes until slightly thickened.
  6. Return chicken to the skillet, spoon sauce over each piece, and let soak for an additional minute. Transfer to plates and garnish with chopped parsley.
