- 3–4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 3 fresh lemons (for juice and zest)
- 3 tbsp capers
- 4 tbsp butter
- 1 cup low-sodium chicken broth
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken breasts between plastic wrap or parchment paper. Gently pound to about half an inch thick. Season both sides with salt and pepper.
- On a plate, pour flour and coat each chicken breast evenly on both sides. Shake off excess flour.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Remove and keep warm.
- In the same skillet, melt butter until foamy. Add minced garlic and sauté for about one minute. Stir in lemon juice, zest, capers, and chicken broth to deglaze the pan.
- Let the sauce simmer for about five minutes until slightly thickened.
- Return chicken to the skillet, spoon sauce over each piece, and let soak for an additional minute. Transfer to plates and garnish with chopped parsley.
