  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 2 tbsp unsalted butter
  • Salt, to taste
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Chopped green onions, for garnish

Instructions

  1. In a medium saucepan, bring chicken broth to a boil.
  2. Stir in the grits and reduce heat to low. Cook according to package instructions until creamy, about 5-7 minutes.
  3. Stir in butter and salt to taste.
  4. In a large skillet over medium-high heat, melt butter.
  5. Add minced garlic and sauté for about 1 minute until fragrant.
  6. Toss in shrimp and Cajun seasoning; cook until shrimp turn pink and opaque, about 3-4 minutes.
  7. Pour heavy cream into the skillet with shrimp; let it simmer gently for about a minute until slightly thickened.
  8. Once grits are cooked, stir them into the skillet with the shrimp mixture until well combined.
  9. Remove from heat and garnish with chopped green onions.
